The Salaverria Family's Flagship Farm

El Molinito is the main lot from El Molino, the largest farm owned by the Salaverria family, nestled within El Salvador's Apaneca-Ilamatepec mountain range. The farm's varied landscape creates unique growing conditions, with some areas protected by structured windbreaks while others benefit from natural shade. El Padre occupies the lowest elevations, while Buena Vista crowns the highest point of the estate.

Rooted in El Salvador's Coffee Heritage

Most of El Molino is planted with Bourbon, complemented by Hybrido de San Francisco (HSF) and the locally developed Pacas variety. Pacas, a naturally occurring dwarf mutation of Bourbon, allows for higher planting density and increased yields, making it one of Central America's most important coffee varieties. HSF itself originated from Pacas on another of the Salaverria family's farms, San Francisco.

From Cherry to Export at Las Cruces

Once harvested, the coffee is transported to Beneficio Las Cruces in nearby Santa Ana, where it is expertly processed before being prepared for export. While El Molino was once the family's processing centre, operations moved to Las Cruces following its acquisition in 2002. Today, the farm still retains its drying patios, which come into use during the busiest parts of the harvest season.

Experienced Hands Behind Every Harvest

Farm manager Tomas Mendoza has overseen El Molino for more than a decade, guiding its continued development and maintaining the exceptional standards the Salaverria family is known for. His work includes managing the transition away from the farm's historic processing facilities while ensuring the estate continues to produce outstanding coffees year after year.
